Ingredients
1 cup vegetable oil3 eggs
2 cups Naturally Sweet Xylitol
½ teaspoon vanilla powder
3 cups diced apples; used Granny Smith and Royal Gala
3 cups self-raising flours, sifted (see Notes)
1 teaspoon allspice
1 teaspoon baking soda
1 teaspoon Himalayan pink salt, finely ground
½ cup walnuts, finely ground
oil spray
extra Naturally Sweet Xylitol for sprinkling (optional but recommended)
Methods:
In a mini chopper, add nuts of choice, finely grind; set aside.Pre heat over to 140C.
In a large bowl, combine flour, allspice, and salt.
Add dry ingredients to oil mixture gradually.
Add in apples and nuts; combine well.
NOTE: Makes 2 loaves
Oil spray baking tins; place half the mixture in each.
Bake for 1 hour and 30 minutes or until golden brown and toothpick comes out clean. (see Notes)
Remove from oven; cool for 10 minutes.
Remove from pans and place on wire rack; sprinkle with Naturally Sweet Xylitol. Notes

if using sugar, okay to use all-purpose flour, sifted.
baking times may vary; if bread starts to brown too quickly, can always cover with aluminum foil or slightly oiled baking paper
