Banana Muffins Recipe

Make great tasting banana muffins using our stevia blend.

Sweetener quantity updated. Our Stevia Blend is five times sweeter than sugar. An earlier version of this recipe called for 4½ tablespoons, which works out at well over a cup of sugar for twelve muffins. Taste the batter and adjust to suit you.

What you will need

  • ½ cup refined oil
  • 2 eggs
  • ⅓ cup yoghurt
  • 1 large ripe banana, mashed
  • 2 tablespoons Naturally Sweet Stevia Blend
  • ½ teaspoon vanilla essence
  • 1½ cups plain flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder

How to make them

  1. Grease your muffin moulds.
  2. Beat the oil and eggs in a mixing bowl, then add the yoghurt, mashed banana, stevia blend and vanilla essence.
  3. Sift the flour, baking soda and baking powder together, add to the liquid mixture and beat until the batter smooths out.
  4. Pour into the greased muffin moulds and bake for 30 minutes.

Makes 12 muffins.

Sweetener options

To replace the 2 tablespoons of stevia blend, use about ½ cup of monk fruit blend or xylitol (both 1:1 with sugar), or about ⅔ cup of erythritol, which is around 70% as sweet as sugar. Our conversion chart has the full range.
