Creamy Coconut Rice Recipe

Ingredients:

\n1 cup cooked white rice
\n1/2 cup coconut milk
\n1 cup low fat yoghurt (fruit flavoured)
\n1 level teaspoon Naturally Sweet Xylitol
\n1 banana, sliced thinly
\n3 large passionfruit\n\n

Method:

\nCombine rice, coconut milk, yoghurt, banana and the pulp of two passionfruit into a bowl.
\nDivide into 4 serving dishes.
\nTop with remaining passionfruit pulp.
\nRefrigerate 4 hours before serving.\n\n
