\n\n\nA smidgen of Monk Fruit Powder would be ideal in this recipe or any of our other sweeteners.\n\n
\nDelicious light and fluffy pancakes that are sugar free, gluten free and low in carbs. There's also an option to make these nut free.
\n\nThe ricotta cheese adds wonderful creaminess and there are subtle hints of lemon and vanilla, that goes wonderfully with the ricotta.
\n\nThe whole family are going to absolutely love this healthy recipe!

\n\nIngredients (6 serves)
\n\n
\n\n- \n \t
- 4 large eggs \n \t
- 200 grams ricotta cheese full fat \n \t
- 60 mls almond milk \n \t
- 1 teaspoon vanilla extract \n \t
- 1 teaspoon lemon zest \n \t
- 200 grams almond flour/almond meal or 45 grams coconut flour \n \t
- 2 tablespoons erythritol or a smidge of Monk Fruit Powder \n \t
- 1 teaspoon baking powder \n \t
- A pinch salt \n \t
- Butter for pan frying \n \t
- ¾ cup blueberries fresh or frozen \n

\nInstructions

- \nPlace the ricotta, almond milk, eggs and vanilla extract in a medium bowl and whisk until smooth.\n \t
- \nAdd the remaining ingredients minus the blueberries and stir until well combined. Finally gently fold through the blueberries. You can poke the blueberries into the poured batter to prevent staining the batter blue/purple if preferred.\n \t
- \nHeat a non stick frying pan on medium heat until pan is hot and add a dob of butter to cover the base.\n \t
- \nPour the batter onto the frying pan-I use about 2-3 tablespoons per pancake as smaller ones are easier to handle. Smooth the batter out slightly if it sits too high and allow to cook fully on one side for about 3 minutes before flipping. Flip the pancakes over and brown on the other side for another 3 minutes or until cooked through- adding more butter if required.\n \t
- \nTo cook another batch add more butter to the pan before cooking adding the batter.\n \t
- \nServe pancakes immediately.\n

\n\nRecipe Notes
\nIf mixture is too thick, add a little additional almond milk a little at a time.\n\nIf using thawed frozen berries, wipe with paper towel to remove excess juice.\n\nRecipe makes approximately 12 smaller pancakes.\n\nNote that nutrition doesn't include any toppings.
