Oat and Banana Loaf Recipe

A moist banana and oat loaf, sweetened with our stevia blend.

Sweetener quantity updated. Our Stevia Blend is five times sweeter than sugar. An earlier version called for 4 tablespoons, which works out well over a cup of sugar — and with three ripe bananas in the mix, this loaf needs very little added sweetness. Taste the batter and adjust to suit you.

Ingredients

  • Wholewheat flour — 1 cup
  • Oats — 1 cup
  • Dry ginger powder — 2 teaspoons
  • Baking soda — 1 teaspoon
  • Naturally Sweet Stevia Blend — 1½ tablespoons
  • Vegetable oil — ½ cup
  • Lemon juice — 1 tablespoon
  • Thick yoghurt — 2 tablespoons
  • Bananas — 3 medium, ripe

Method

  1. Peel and mash the bananas, mix well with the lemon juice and set aside.
  2. Mix all the dry ingredients together.
  3. Mix the oil, yoghurt and bananas, beating well.
  4. Combine the dry and wet ingredients, folding gently, and pour into a greased loaf tin.
  5. Bake for 30 minutes in an oven pre-heated to 180°C. Check with a knife — it should come out clean.

Sweetener options

To replace the 1½ tablespoons of stevia blend, use about ⅓ cup of monk fruit blend or xylitol (both 1:1 with sugar), or about ½ cup of erythritol. Our conversion chart has the exact ratios.
