Low Cal Pavlova Recipe

I am on the Atkins Diet, so I can't eat very many carbohydrates, let alone sugar! I made a pavlova for a treat on Christmas day. It was delicious!\n\n

Ingredients:

\n4 egg whites
\n3/4 - 1 cup Naturally Sweet Xylitol (depends how sweet you like it)
\n1 tsp. vinegar
\n1 tsp. vanilla essence\n\n

Method:

\nBeat the egg whites on a high speed till stiff peaks form.
\nGradually add xylitol and beat for 5 tp 10 minutes until mixture is smooth and glossy.
\nMix in the vinegar and vanilla essence.
\nPlace onto a foil-lined, greased pizza tray and shape nicely.
\nBake at 150C for 40 - 45 minutes.
\nTurn oven off and allow to cool in oven.
\nWhen ready to serve, spread with whipped cream and strawberries.\n\nYUM!\n\n
