Low Cal Pavlova Recipe

I am on the Atkins Diet, so I can't eat very many carbohydrates, let alone sugar! I made a pavlova for a treat on Christmas day. It was delicious!

Ingredients:

4 egg whites
3/4 - 1 cup Naturally Sweet Xylitol (depends how sweet you like it)
1 tsp. vinegar
1 tsp. vanilla essence

Method:

Beat the egg whites on a high speed till stiff peaks form.
Gradually add xylitol and beat for 5 tp 10 minutes until mixture is smooth and glossy.
Mix in the vinegar and vanilla essence.
Place onto a foil-lined, greased pizza tray and shape nicely.
Bake at 150C for 40 - 45 minutes.
Turn oven off and allow to cool in oven.
When ready to serve, spread with whipped cream and strawberries. YUM!
