Another wonderful recipe from @emmswason!
Light, fluffy, soft, tender (secretly healthy) deliciously buttery, cinnamon spiced donuts infused with sweet juicy strawberries finished with the dreamiest white chocolate frosting!
Healthy enough to serve for breakfast (with a big ol’ vat of coffee, of course) but indulgent enough to enjoy for a cheeky little late night treat.
Ingredients:
- 2 eggs
- 2 Tablespoons of vanilla yoghurt
- 2 Tablespoons of unsweetened vanilla almond milk
- 2 teaspoons of vanilla
- 1 cup almond flour
- 1/4 cup freeze dried strawberries, crushed
- 1 teaspoon of coconut flour
- 1/4 cup Naturally Sweet Monk Fruit
- 1/2 teaspoon of cinnamon
- 1 teaspoon baking powder
- 1/2 teaspoon of baking soda
- A pinch of salt
- For the frosting –
- 1 block of white chocolate – I used dairy free
- For the pink tint I added this gypsy rose latte mix by Knowrish well – amazing ingredients and super yum!
Instructions:
- For the donuts ;
- Pre-heat oven to 175’C/350’F
- Grease your donut pan (or muffin tray) then set aside.
- Place all donut ingredients apart from the feeze dried strawberries in to a medium size bowl and stir until well combined.
- Add freeze dried strawberries and stir to combine.
- Pipe (or spoon) your donut mix in to your prepared donut (or muffin) tray. I like to pour the mixture in to a zip lock bag , snip of the corner and pipe it in to the tray. I find it a lot easier (and way less messy) to do it this way.
- Bake for 10-12 minutes (or 15-20 if doing muffins) until the top springs back when lightly pressed.
- Set aside to cool while you make your glaze.
- While your donuts are cooling prepare the frosting –
- Melt chocolate by your preferred method
- If tinting half, divide in to a separate bowl and stir in latte mix (or colouring of choice)
- Dip donuts in to melted chocolate, drizzle any extra to make pretty patterns and sprinkle with extra freeze dried strawberries (or sprinkles of choice because fun!!) .
- Devour!
