\n1/2 cup egg whites\n\n1 1/2 cups plain Greek nonfat yogurt\n\n1 tablespoon orange juice or half an orange, juiced\n\n1/2 teaspoon pure vanilla extract\n\n4 full droppers Lemon Drop SweetLeaf® Liquid Stevia Sweet Drops™ or Valencia Orange SweetLeaf® Liquid Stevia Sweet Drops™\n\nZest of 1 lemon, divided\n\nZest of 1 orange, divided\n\n1 cup ground shortbread cookie\n

Method

\nFill a small saucepan with water and bring water to a boil.\n\nPour egg whites into a glass bowl that will fit just over the saucepan. Make sure the bottom of the bowl does not touch the boiling water.\n\nWhisk the egg whites continually for 2-3 minutes until they are foamy.\n\nRemove from stove. Whip egg whites until soft peaks form. Set aside.\n\nIn a separate bowl, mix together yogurt, orange juice, vanilla extract, Lemon Drop SweetLeaf® Liquid Stevia Sweet Drops™ or Valencia Orange SweetLeaf® Liquid Stevia Sweet Drops™ and half of the lemon zest of orange and lemon. Set aside.\n\nIn another small bowl, mix the rest of the zest with the ground shortbread cookie.\n\nEvenly divide the crumbled cookie into 4 serving dishes, saving 1/4 cup for the topping.\n\nFold the egg whites into the yogurt mixture.\n\nPour the yogurt mousse into each serving dish.\n\nSprinkle with the remaining crumbled cookie.\n\nChill for 1 hour.
