Apple Crumble Pie Cookies Recipe

Recipe Ingredients:

\nApple Potato Saute\n\n- 1 medium granny smith apple, peeled, cored, finely diced
\n- 1 medium potato, peeled, finely diced
\n- 1 1/2 tablespoons butter
\n- 1 teaspoon mixed spice (cinnamon, nutmeg, allspice)\n\nCrumble
\n- 1/2 cups all-purpose flour, sifted
\n- 1/4 cup Naturally Sweet Xylitol
\n- 4 teaspoons cinnamon butter, room temperature\n\nCookie
\n- 2 cups Xylitol with 2 teaspoons cinnamon
\n- 1/2 cup (4 ounces) butter, room temperature
\n- 1/2 cup organic coconut butter, solid state
\n- 2 cups all-purpose fluor, sifted
\n- 2 cups old fashion oats
\n- 1/2 teaspoon baking soda
\n- 1/2 teaspoon salt (e.g. pink Himalayan)
\n- 1 teaspoon mixed spice (cinnamon, nutmeg, allspice)
\n- 2 eggs
\n- 1/8 teaspoon pure organic vanilla powder
\n
\nDirections:
\n\n1. In a sauce pan, melt 1 1/2 tablespoons butter then add apples, potatoes and 1 teaspoon mixed spice; stir over medium heat for approximately 10 minutes or tender; set aside.
\n2. Pre heat oven to 180C. Combine 1/2 cup flour, 1/4 cup Xylitol and 4 tablespoons butter with a fork or pastry blender.
\n3. Spread crumbs out on a flat baking tray; bake for 15 - 17 minutes until crumbs turn a golden brown colour, tossing twice during baking time.
\n4. Break up crumbs into crumble. Spread on a plate and place in freezer to cool down.
\n6. In a stand up mixer, combine 1/2 cup butter, coconut butter, 2 cups xylitol, 1 teaspoon mixed spice and vanilla powder; beat until light and fluffy.
\n7. In a separate large bowl, combine 2 cups flour, oats, baking soda and salt; mix together well.
\n8. Slowly stir in dry ingredients to creamy mixture until combined; stir in cooled apple and potato.
\n9. On a flat baking tray, roll out cookie dough into 1 1/2 inch balls making sure they are placed 2 inches apart. Bake for 6 minutes; remove.
\n10. Place 1 1/2 teaspoon of crumble on top of cookie; return to oven and bake until lightly golden brown.
