Lime & Ginger Cake Recipe

This cake is "zingy"and with the cool sweetness of xylitol it really works!\n\n

Ingredients:

\n400g Spelt Flour
\n1 tsp baking powder
\n150g Naturally Sweet Xylitol
\n2 Eggs
\n200g Butter
\n1 inch grated fresh ginger
\nJuice of 1 lime
\n1 tsp of grated lime rind\n\n

Method:

\nBeat the butter and xylitol until light and fluffy.
\nStir in eggs one at a time and then add ginger, juice and rind.
\nSift in flour and baking powder and fold in until the mixture is smooth.
\nPour batter into a greased tin and bake at 180 degrees for 25 mins or until a knife comes out clean from the middle.\n\nEat the same day if possible!\n\n
