Mandarin Carrot Cake Recipe

Ingredients:

\n2 teas grated mandarin rind
\n1/3 cup Mandarin juice
\n2 carrots grated ( 250 gr)
\n½ teas Stevia SweetLeaf
\n½ teas bicarb soda
\n1 ½ cups Gluten Free S.R flour
\n2 tabs glycerine
\n1/3 cup oil
\n3 beaten eggs\n\n

Methods:

\n1. Preheat oven to 180 C and grease a 22x10 cm loaf tin
\n2. Mix all dry ingredients well in a lager bowl
\n3. Add grated carrots mix well including the rind
\n4. Combine oil, juice and beaten egg and add to the dry mixture mix well
\n5. Pour into loaf tin and bake for approx. 40 minutes or till cooked
\n6. Ice when cool with plain icing to which 2 teas of grated mandarin rind is added\n\n
