Oatmeal Raisin Cookies Recipe

This is a delicious low-fat recipe for cookies using Naturally Sweet Xylitol instead of sugar\n\n

Ingredients:

\n1 cup of flour (wholemeal or plain)
\n1 cup of quick oats
\n1/2 cup of Naturally Sweet Xylitol
\n1/8 teaspoon of salt
\n1/2 teaspoon of cinnamon
\n1/2 teaspoon of baking soda
\n1/8 teaspoon nutmeg
\n2 egg whites
\n1/3 cup of corn syrup (dark or light)
\n1 teaspoon of vanilla
\n1/2 cup of raisins\n\n

Directions:

\nPreheat oven to 190 degrees.
\nBrush a cookie sheet lightly with oil.
\nIn a large bowl combine the dry ingredients.
\nStir in the egg whites, corn syrup and vanilla. Mix well.
\nAdd raisins.
\nThe mixture should be quite stiff.
\nDrop by teaspoonful onto cookie sheet.
\nBake for 10 minutes or until firm. Do not overbake.
\nCool on a wire rack.\n\nMakes around 2 1/2 dozen cookies.\n\n
