Ingredients:
\n• 175 gr medley fruit mix\n• Grated rind of 1 orange
\n• 13 Tbsp fresh orange juice
\n• All the above marinated overnight
\n• 125 g Nutlex or margarine of choice
\n• ¾ cup Naturally Sweet Xylitol
\n• 2 Tbsp Glycerine
\n• 1 Tsp Vanilla
\n• 2 eggs beaten
\n• 2 cups Self raising gluten free flour (I used Orgran brand)
\n• 1 Tsp Guar gum
\n• About ½ cup fresh orange juice\n\n
Method:
\nPre heat oven to moderate\nLine a 20 cm square tin with baking paper
\nCream Nutlex, Naturally Sweet Xylitol and vanilla till creamy
\nAdd eggs add the marinated fruit and finally the flour and guar gum adding more orange juice as required to make a soft dropping consistency
\nPlace in lined cake tin and bake for about 50-60 minutes or till cooked
\nLeave in tin for about 5 minutes them turn out and cool.\n\n
