Ingredients:

  • 4 egg yolks
  • \n
  • 1/2 cup Naturally Sweet Xylitol
  • \n
  • 1 Tbsp unbleached white flour
  • \n
  • 1 ¾ cup milk
  • \n
  • 1/2 tsp vanilla extract
  • \n
  • grated rind of 1/2 lemon
  • \n
  • Ripe banana (optional)
  • \n

Method:

\nPlace yolks and sugar in a bowl and lightly whisk together. Continue stirring and add the flour. Set aside.\n\nIn a medium sauce pan, pour the milk, vanilla extract and grated lemon rind. Bring to a boil and remove from heat. Strain the hot milk mixture gradually into the bowl with the egg and sugar mixture, stirring while you pour. Strain the contents back into the sauce pan and heat to a simmer, careful not to boil. Stir constantly for about 5 minutes.\n\nRemove and allow to cool for a few minutes. As the custard cools, stir occasionally to prevent a skin from forming on top. If using a banana, blend it until smooth, so there is no lumps and add to the custard once its cooled a bit.
