Sugar & Gluten Free Melting Moments

Here's a fantastic recipe for yummy melting moments from our friends at The Merrymaker Sisters (#themerrymakersisters). It uses Naturally Sweet Erythritol and our Xylitol Icing Sugar and is a perfect, sugar-free treat that is so YUMMY! 

 TOTAL TIME = 20 Minutes SERVES 8 STUFF YOU NEED 2/3 cup blanched almond meal 1/3 cup coconut flour 1/4 cup granulated erythritol (or preferred granulated natural sweetener) 120 g (4.2 oz.) butter (softened) 1 tsp. 100% vanilla extract 1/2 tsp baking powder pinch of salt FOR THE ICING 3/4 cup xylitol icing sugar 60 g (2 oz.) butter (softened) 1 lemon (juice and rind) 1 tsp. 100% vanilla extract NOW WHAT Start with the biscuits. Preheat your oven to 180°C (350°F) and line a baking tray with baking paper. Mix the almond meal, coconut flour, erythritol, baking powder and salt together in a bowl. Add the butter and vanilla, mix together with your hands until a smooth dough forms. Place into the fridge for 10 minutes. Take teaspoons of dough, roll into balls, place onto the prepared tray and press down with a fork. Place into the oven for 6 minutes, allow to cool completely before icing! For the icing, place all the ingredients into a mix master or blender, whiz until super smooth and delish! To make the melting moments, place a tablespoon of icing onto the bottom of a biscuit, and then place another top! Wa-LAH! ENJOY!
