Sugar & Gluten Free Melting Moments

Here's a fantastic recipe for yummy melting moments from our friends at The Merrymaker Sisters (#themerrymakersisters). It uses Naturally Sweet Erythritol and our Xylitol Icing Sugar and is a perfect, sugar-free treat that is so YUMMY!\n\n\n\nTOTAL TIME = 20 Minutes\nSERVES 8\n\nSTUFF YOU NEED\n2/3 cup blanched almond meal\n1/3 cup coconut flour\n1/4 cup granulated erythritol (or preferred granulated natural sweetener)\n120 g (4.2 oz.) butter (softened)\n1 tsp. 100% vanilla extract\n1/2 tsp baking powder\npinch of salt\n\nFOR THE ICING\n3/4 cup xylitol icing sugar\n60 g (2 oz.) butter (softened)\n1 lemon (juice and rind)\n1 tsp. 100% vanilla extract\n\nNOW WHAT\nStart with the biscuits. Preheat your oven to 180°C (350°F) and line a baking tray with baking paper.\nMix the almond meal, coconut flour, erythritol, baking powder and salt together in a bowl.\nAdd the butter and vanilla, mix together with your hands until a smooth dough forms.\nPlace into the fridge for 10 minutes.\n\nTake teaspoons of dough, roll into balls, place onto the prepared tray and press down with a fork.\nPlace into the oven for 6 minutes, allow to cool completely before icing!\n\nFor the icing, place all the ingredients into a mix master or blender, whiz until super smooth and delish!\nTo make the melting moments, place a tablespoon of icing onto the bottom of a biscuit, and then place another top! \n\nWa-LAH!
