Gluten Free Pancake Recipe

This pancake recipe is Gluten and Casein free.\n\n

Ingredients:

\n\n\nRice-65gms
\nCoconut-65gms
\nStevia–72gms
\nCinnamon powder-3gms
\nWater–1½ cups
\nVegetable oil–10 gms\n\n

Method:

\nWash and soak the rice in 1 cup water for 4 hours.\n\nGrind this rice with water and 1 tablespoon of grated coconut to a smooth batter. Add remaining ½ cup of water. Let it sit for 1 hour.\n\nHeat a griddle, grease it with some oil spray, pour a ladle full of batter and tilt the griddle to spread the batter evenly and thinly shaping it into a pancake .\n\nCover with a lid and let it cook for 2 minutes.\n\nMeanwhile mix the remaining coconut with Naturally Sweet Stevia and cinnamon powder. Divide in four portions.\n\nPlace this mixture in the centre of the pancake and roll the pancake.\n\n
