A great after dinner treat when you just want a little something sweet.\n\n
Crust Ingredients:
\n1 ¼ cups spelt flour or wholewheat pastry flour
\n¼ cup plus 3 tablespoons
Naturally Sweet Xylitol\n3/8 teaspoon salt
\n5 tablespoons unsalted butter
\n2 ½ tablespoons unsweetened applesauce
\n½ teaspoon maple flavouring\n\n
Filling Ingredients:
\n1 cup plus 3 tablespoons
Naturally Sweet Xylitol\n1 ½ cups dry milk powder
\n4 tablespoons unsalted butter
\n½ cup plus 2 tablespoons boiling water
\n1 egg
\n1 ½ teaspoons vanilla extract
\n½ teaspoon maple flavoring
\n1 teaspoon lecithin granules
\n½ cup unsweetened cocoa powder, sifted
\n1 ¾ cups chopped pecans\n\n
To make crust:
\nButter a 9" x 13" baking dish, line bottom and sides with parchment paper, and lightly butter parchment paper. Mix flour, Xylitol, and salt together, then cut in butter until mixture resembles coarse crumbs. Stir in applesauce and maple flavouring; mixture will be crumbly. Press firmly onto bottom of prepared pan, and prick with fork halfway through crust. Bake at 350 degrees for 15 minutes.\n\n
To make filling:
\nPlace xylitol, milk powder, butter, and boiling water in blender; process for several minutes or until mixture is smooth. Add egg, vanilla extract, maple flavouring, lecithin granules, and cocoa powder, and process again until smooth. Transfer to a large bowl, and stir in chopped pecans. Pour into baked crust, and bake at 350 degrees for 20-25 minutes or just until filling is set. Allow to cool in pan before cutting into bars.\n\n
