\n\nPerfect for breakfast or a quick and easy dessert, this recipe creates the best low carb sugar free chaffles/waffles. Don’t stress if you don’t have a waffle or chaffle maker as the recipe also includes stove top instructions.
\nMy favourite way to serve these is drizzled with sugar free maple syrup, topped with fresh berries and whipped or fresh cream...absolutely delish!!
\nIf you haven’t had a chaffle yet, after trying these you’ll understand why there is a chaffle craze!
\n\nIngredients (makes 3 mini chaffle/waffles)
\n- \n \t
- 1 large egg \n \t
- ½ cup grated/shredded mozzarella cheese \n \t
- ⅓ cup almond flour \n \t
- A pinch of baking powder \n \t
- 1 tablespoon low carb sweetener (we like Monk Fruit Blend) \n \t
- 1 tablespoon almond milk or milk of choice \n \t
- A dash of vanilla extract \n \t
- Optional-a pinch of cinnamon \n
Instructions
\n- \n \t
- \nPreheat a mini chaffle/waffle maker or use a larger Belgian waffle maker.\n \t
- \nPlace all waffle ingredients in a small bowl and mix until combined.\n \t
- \nMixture makes 3 small chaffles in a smaller chaffle maker or 1 large Belgian style waffle. Spoon 2-3 tablespoons of batter onto your hot chaffle/waffle iron for a small chaffle or all of the batter into a large Belgian waffle maker.\n \t
- \nCook for 2-3 minutes. Lift the lid and allow to cool for about 10 seconds before you remove the chaffle. If mixture starts to ooze out, lift the lid a little for about 10-20 seconds to relieve the pressure then slowly place the lid back down again.\n \t
- \nAllow chaffles/waffles to cool on a cooling rack if desired or serve warm. Repeat process to cook remaining chaffles/waffles\n \t
- \nChaffles/waffles are soft when warm but crisp up as they cool down.\n
Serving Options
\n- \n \t
- \nTop with butter and low carb strawberry or raspberry jam\n \t
- \nDrizzle with a little sugar free maple syrup and cream.\n \t
- \nTop with Greek yogurt and berries\n \t
- \nTop with maple syrup, berries and whipped cream.\n \t
- \nServe with maple syrup and bacon on the side.\n
Storing Chaffles
\n- \n \t
